Common hop (Humulus lupulus) is a creeping or climbing perennial plant from the hemp family. In the beer brewing process, female hop flowers, known as cones, are used. Hops grow wild in the Northern Hemisphere and are also cultivated in many countries around the world, especially in regions with a temperate climate. Hop cones contain aromatic and bittering substances that give beer its characteristic qualities.
In antiquity and the Middle Ages, beers were primarily flavored with mixtures of herbs, spices, and other plant ingredients (juniper, myrtle, and rosemary were used for this purpose, among others). Although hops were probably also added to beer as early as antiquity, they did not become established in European brewing until around the 9th-10th century. Hops began to be used on a larger scale in beer production from the 11th century onward. This was associated with the founding of new monasteries and the development of brewing among monks. It was the monks who discovered that hops give beer a pleasant bitterness and wonderful aroma, while also acting as a natural preservative that helps beer stay fresh for longer. In the 13th century, hopped beers became very popular in Central Europe, and Germany, the Czech lands, and Poland became important hop-growing regions.
Today, hops are added to beer for several important reasons. Above all, they give beer its characteristic bitterness. This neutralizes the sweet flavors derived from barley malt and shapes a balanced beer flavor profile. Thanks to bitterness, beer is neither too bland nor too sweet. The bitterness in beer comes mainly from α-acids, which are released during boiling. During wort boiling, these compounds are transformed into soluble iso-α-acids (the so-called isomerization), which give beer a distinct bitter flavor. Hops are also responsible for many aromas that may appear in beer. Depending on the hop variety, these aromas may include citrus, floral, resinous, herbal, fruity, or spicy notes. Aromatic hop oils are released during a short hop boil or during so-called dry hopping, when hop cones are added to beer at lower temperatures, after fermentation has ended. This gives beer a complex bouquet.
Hops have antibacterial and antiseptic properties, helping protect beer against the growth of unwanted microorganisms and extending its shelf life. This was particularly important in times when pasteurization was not yet used. Thanks to the presence of hops, beers were more stable and could be transported over longer distances. India Pale Ale (IPA) was heavily hopped precisely so that it could survive the long journey from Great Britain to India. Hops contribute to protein coagulation during boiling, which promotes the precipitation of sediment and helps improve beer clarity. In addition, substances contained in hops help maintain a stable and dense head.
There are many hop varieties available on the market, and they can affect the final taste and aroma of beer. Two main types of hops are distinguished: bittering hops and aroma hops. Bittering hops have a high α-acid content. They are added at the beginning of the boiling process, allowing α-acids to be transformed into soluble iso-α-acids and producing the desired bitterness. Bittering hop varieties include Magnum, Columbus, and Target, among others. Aroma hops are characterized by a lower α-acid content but contain a greater amount of essential oils responsible for complex beer aromas. To preserve the aromatic properties of these hops, they are added at the end of boiling or during dry hopping. Popular aroma hop varieties include Cascade, Citra, Saaz, and Amarillo, among others. Some hop varieties, such as Centennial and Simcoe, are versatile because they combine the characteristics of bittering and aroma hops. They are often used by home and commercial brewers.
Hops can be added to beer at various stages of production. Adding hops during wort boiling extracts bitterness. The longer the hops are boiled, the more intense the bitterness becomes. However, this comes at the cost of losing aromas. Dry hopping involves adding hops after fermentation has ended, when the beer temperature is lower. This prevents the aromatic oils from evaporating and gives the beer an intense aroma. Preserving more delicate aromas is possible by adding hops after boiling and cooling the wort (to a temperature of around 80 degrees Celsius), when the wort is in a whirlpool (this stage is known as the whirlpool). Hopping in this way does not cause a significant increase in bitterness, but the beer’s aroma becomes more pronounced because the aromatic oils do not evaporate as they do during boiling.
Hops are used differently depending on the beer style. In beers such as IPA (India Pale Ale) and APA (American Pale Ale), hops are the dominant ingredient, giving the beer pronounced bitterness and intense citrus, resinous, and fruity aromas, while in classic lagers they are used more subtly to give the beer a light aroma and balance its maltiness. In beers such as stout and porter, hops play a complementary role, and their bitterness works together with roasted malt aromas. Modern brewing is increasingly experimenting with hops, discovering new varieties and introducing new hopping techniques.
For hundreds of years, hops have shaped the taste, aroma, and shelf life of beer. Adding hops makes beer more durable, gives it characteristic bitterness, and provides distinctive aromatic notes. Thanks to the wide variety of hops and hopping techniques, brewers can create beers with a broad spectrum of flavors, meeting the needs of consumers around the world. Although hops have become an integral ingredient of beer, there is still room for experimentation and discovering their new, fascinating possibilities.
