Fruit and Vegetable Concentrate Production
We monitor the raw material, the technological process and each batch of finished concentrate to ensure product stability, safety and consistent parameters
VIN-KON S.A., based in Konin, is a company with many years of experience in fruit and vegetable processing and in the production of concentrates intended for the food, processing and fermentation industries, as well as for the catering and confectionery sectors. The technology used by VIN-KON S.A. makes it possible to obtain products with high consistency, an intense flavour profile, natural colour and stable physicochemical parameters.
The greatest value of the VIN-KON S.A. production process lies in the combination of high-quality raw materials, experienced technological staff, modern production facilities and rigorous quality control. Each batch of raw materials, every stage of processing and each batch of finished concentrate is subject to continuous technological and laboratory evaluation.
At VIN-KON S.A., quality is controlled from the moment fruits and vegetables are received, through washing, sorting, crushing, pressing, filtration, concentration and pasteurisation, all the way to storage and preparation of the product for dispatch. As a result, VIN-KON S.A. concentrates can meet the requirements of industrial customers seeking consistency, safety and high technological quality.
A particular strength of the company is its specialised workforce. Production and process control are handled by experienced specialists who understand the specifics of fruits, vegetables, juices, extracts, concentration and preservation of liquid products. The employees’ technological expertise makes it possible to properly conduct the process for each raw material individually.
Another very important element of the VIN-KON S.A. quality system is its own in-house laboratory. It enables the ongoing testing of the parameters of raw materials, semi-finished products and finished concentrates. The following are monitored, among other things: concentration, acidity, pH, colour, clarity, turbidity, viscosity, sediment, stability, taste, odour and compliance with customer requirements. This allows the production process to be continuously monitored and adjusted.
Production process
The production of fruit and vegetable concentrates at VIN-KON S.A. begins with the selection of raw materials. Fruits and vegetables intended for processing are delivered to the plant and must meet specified quality requirements. Their freshness, ripeness, smell, appearance and technological suitability are checked as soon as they are received.
The raw materials are then thoroughly washed and sorted. Damaged, spoiled, unripe or contaminated fruits and vegetables, as well as those that do not meet quality requirements, are removed. VIN-KON S.A. attaches particular importance to this stage because the quality of the concentrate begins with the quality of the raw material. Even the best technology cannot replace a good, healthy and properly prepared fruit or vegetable.
After cleaning, the raw material is crushed, mashed, pressed, sieved or subjected to extraction, depending on the type of product. The process is conducted differently for apples and pears, differently for dark fruits such as blackcurrants, chokeberries and elderberries, and differently again for vegetable raw materials such as beetroot, black radish, onions and celery.
At the next stage, the juice, purée or extract is cleaned, clarified, filtered or stabilised. In the case of clear concentrates, the aim is to obtain a clean, homogeneous and stable product. In the case of cloudy or purée concentrates, some of the natural pulp is retained, as it is responsible for the product’s full flavour, colour and texture.
The most important stage is concentration, which involves removing some of the water. At VIN-KON S.A., this process is carried out in a controlled manner to preserve the raw material’s natural character as effectively as possible. Properly selected concentration parameters make it possible to obtain a concentrate with a high solids content, intense colour, concentrated flavour and stable technological properties.
After concentration, the product is pasteurised, cooled and prepared for storage or shipment. The finished concentrates are tested in the laboratory and evaluated sensorially to ensure that each batch meets quality and commercial requirements.
